Eddie Yoshio Edamatsu

Eddie Yoshio Edamatsu Obituary (Age 91) Passed away July 10, 2012 at the Hospice House of Spokane. Eddie was born February 5, 1921 in Los Angeles, California, the only child of Tsunazo and Chiyoe Edamatsu. He moved to Spokane after graduating high school around 1938, and became a vegetable truck farmer in Garden Springs. In the early '50s, Eddie started a second business, Eddie's Salad. He made pre-packaged salads and prepared vegetables that were sold in grocery stores and served in restaurants, hospitals and schools in Eastern Washington and Idaho. Besides working with the earth raising vegetables, grapes, cherries, plums, apples, walnuts, and the sweetest corn ever, Eddie loved to fish year-round and pick wild mushrooms and huckleberries. Family outings most often centered around these activities. Long after he retired from commercial farming and his salad business, Eddie continued to maintain a large home garden. He generously shared the fruits of his labor and hobbies with family, friends, and neighbors. Not to be forgotten was his wonderful sense of humor which he retained to the very end, joking with the medical staff at Deaconess Hospital in the wards and in CICU. While Eddie may no longer be here with his family and friends, he left behind a storehouse of wonderful memories that his family and friends will be able to share and cherish for a very long time. Eddie is survived by his wife of 68 years, Seiko; and four daughters, Phyllis Edamatsu (Dover, DE), Patricia Cooper (Pasco, WA), Pam Schierman and husband, Dan (Spokane, WA) and Priscilla Edamatsu (Kirkland, WA). His memorial service will be held at 11:30 a.m., Saturday, July 28, 2012 at the Highland Park United Methodist Church, 611 S. Garfield St., Spokane, WA.
