Evelyn Lou Lund Obituary Evelyn "Evy" Lou Lund was born March 29, 1927 to Rudolph and Marguerite Erickson of Saco, Montana, she passed away on October 25, 2018 at Sacred Heart Hospital in Spokane surrounded by family. Evelyn spent her early years in Saco and Malta, Montana. She began working at her father�s theater in Malta when she was very young and continued to work at many roles until her retirement. Evelyn moved to Spokane, WA when she was seven years old. Her mother owned at beauty salon on Nevada St. that continues to operate as a barber shop to this day. Evelyn and her friends loved to swim in the Spokane river, as well as the pool at Mission Park. She relayed many fond memories of those days. Evelyn spent her school years between Saco, Malta & Spokane. Evelyn married Richard (Dick) Menke of Saco, MT before he left for the war. She lived with his family on their ranch in Saco and liked to share how they adopted her. Evelyn & Richard had Rex Menke in 1948, their only child. They moved to Spokane, and among other activities ran a motel on East Sprague. Evelyn was a bookkeeper for Appleway Fuel for more than 20 years. She was active as a member of the Credit Women's Association, through whom she volunteered as a credit counselor. Evelyn worked as the office manager for her son's dental practice for 10 years. After retiring, she volunteered for AARP helping seniors with their taxes. After the end of her marriage to Richard, Evelyn became very active in the Sons of Norway. She was President of the Local Tordenskjold Lodge twice. She met her husband, Adolph Lund through the Sons of Norway where they enjoyed many activities together. They regularly assisted with dinners, dances, pancake breakfasts, making lefse bread and proudly rode on the Viking Ship during parades. Evelyn and Adolph travelled to Lillehammer, Norway for an International Convention of the Sons of Norway. Evelyn played a key role in the development of the Viking Plass Senior Apartments on Country Homes Blvd. Evelyn was also active in the Lutheran Church. She was a member of Zion Lutheran in the Spokane Valley. She and Adolph made flatbread for communion for many years. Evelyn held several positions at Zion. In honor of their husbands, she organized a group of widows to design and install a stained glass window placed that displays the elements of communion. Several years after losing her husband, Adolph, Evelyn chose to move into a retirement community for companionship. She happily resided at The Academy for 3 1/2 years adjacent to Mission Park, her "favorite" childhood memory of Spokane. She loved wii bowling and competed in many tournaments with other senior communities. She regularly attended exercise groups, went on outtings and enjoyed having meals with the other residents. Evelyn attended the weekly Bible Study at the Academy and encouraged Pastor Buddy to serve communion once a month. Evelyn was less five feet tall and 85 pounds on a good day, but sure had a lot of energy in that little body! She was described as spunky, sassy, feisty and more. Evelyn accomplished a lot in her life and will be greatly missed by her family and those who knew her. She leaves behind many friends through her associations with Zion Lutheran, the Sons of Norway and The Academy Retirement Community. She was preceded in death by her parents Rudolph (Olive) Erickson and Marguerite (Fred) Hatton, and her brother Ron Hatton. Evelyn is survived by her son, Rex Menke (Pat), grandchildren Kara Kruse, Kyle (Lindsay) Menke and great granddaughter Kaeva Kruse. Her brother Rudolph (Sheila) Erickson, sister-in-law Linda Hatton, nieces Yvette (Frank) Mouton and Julie (Scott) Wilbur. Evelyn has great nieces and nephews, as well as many children, grandchildren and great grandchildren through her marriage to Adolph. Memorial Service will be Sat 11/10 at 2:00 at Zion Lutheran Church, East 8304 Buckeye, Spokane, WA. Reception following.
